This easy and flavorful appetizer combines cubes of cheese and a variety of olives marinated in a herb-infused dressing. It’s perfect for parties, potlucks, or as a delightful snack.

  • 16 ounces (450g) Colby-Jack cheese, cubed
  • 12 ounces (340g) Kalamata olives, drained
  • 1 cup (240ml) Italian salad dressing
  • 1 tablespoon dried Italian seasoning
  • ½ teaspoon crushed red pepper flakes
  • 6 large garlic cloves, smashed
  • 6 fresh rosemary sprigs

Instructions

  • Combine Ingredients:
    • In a large bowl, gently mix the cubed cheese, Kalamata olives, Italian salad dressing, dried Italian seasoning, crushed red pepper flakes, and smashed garlic cloves until well combined.
  • Marinate:
    • Cover the bowl and refrigerate for at least 8 hours, preferably up to 24 hours, to allow the flavors to meld.
  • Prepare for Serving or Gifting:
    • After marinating, divide the mixture evenly among 6 pint-sized glass jars.
    • Place one garlic clove and one sprig of fresh rosemary into each jar.
    • Pour any remaining dressing into the jars, ensuring the contents are well-coated.
  • Storage:
    • Store the jars in the refrigerator for up to two weeks.
