Description

Ingredients

  • 1 (8 oz) block sharp cheddar cheese, cut into 1/4-inch slices

  • 1 (8 oz) block cream cheese, cut into 1/4-inch slices

  • 1/2 cup olive oil

  • 1/2 cup white wine vinegar

  • 1 (2 oz) jar diced pimentos, drained

  • 3 tablespoons chopped fresh parsley

  • 3 tablespoons chopped green onions

  • 1 teaspoon sugar

  • 3/4 teaspoon salt

  • 3/4 teaspoon freshly ground black pepper

  • 3 cloves garlic, minced


Instructions

  1. Arrange cheddar and cream cheese slices alternately in a shallow dish, standing the slices on their edges for a pretty layered effect.

  2. In a small bowl, whisk together olive oil, vinegar, pimentos, parsley, green onions, sugar, salt, pepper, and garlic.

  3. Pour the marinade evenly over the cheese slices.

  4. Cover and refrigerate for at least 8 hours or overnight for the best flavor.

  5. Let it sit at room temperature for 15–20 minutes before serving. Serve with crackers or toasted bread.


Notes

  • Use block cheese for the best results—pre-sliced cheese may be too thin and break apart.
