Ingredients
-
1 (8 oz) block sharp cheddar cheese, cut into 1/4-inch slices
-
1 (8 oz) block cream cheese, cut into 1/4-inch slices
-
1/2 cup olive oil
-
1/2 cup white wine vinegar
-
1 (2 oz) jar diced pimentos, drained
-
3 tablespoons chopped fresh parsley
-
3 tablespoons chopped green onions
-
1 teaspoon sugar
-
3/4 teaspoon salt
-
3/4 teaspoon freshly ground black pepper
-
3 cloves garlic, minced
Instructions
-
Arrange cheddar and cream cheese slices alternately in a shallow dish, standing the slices on their edges for a pretty layered effect.
-
In a small bowl, whisk together olive oil, vinegar, pimentos, parsley, green onions, sugar, salt, pepper, and garlic.
-
Pour the marinade evenly over the cheese slices.
-
Cover and refrigerate for at least 8 hours or overnight for the best flavor.
-
Let it sit at room temperature for 15–20 minutes before serving. Serve with crackers or toasted bread.
Notes
-
Use block cheese for the best results—pre-sliced cheese may be too thin and break apart.
-
You can prepare this up to 2 days in advance. The flavors only get better over time!
-
Try flavored olive oils or add red pepper flakes for a spicier twist.
