Description

Margarita Grilled Shrimp Skewers are a zesty and refreshing seafood dish marinated in tequila, lime, and orange juice, then grilled to perfection. Great for summer cookouts or taco nights.


Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup lime juice (about 2 limes)
  • 2 tablespoons orange juice
  • 2 tablespoons tequila
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Wooden or metal skewers
  • Lime wedges and chopped cilantro, for serving

Instructions

  1. If using wooden skewers, soak them in water for at least 30 minutes.
  2. In a bowl, whisk together lime juice, orange juice, tequila, olive oil, garlic, chili powder, salt, and pepper.
  3. Add shrimp to the marinade and refrigerate for 20–30 minutes.
  4. Preheat grill to medium-high heat. Thread shrimp onto skewers.
  5. Grill shrimp for 2–3 minutes per side, or until pink and opaque.
  6. Remove from grill and serve with lime wedges and chopped cilantro.

Notes

  • Do not over-marinate the shrimp or they may become tough.
  • Can be cooked on a grill pan or broiled in the oven if needed.
  • Serve with rice, tortillas, or over a salad for a full meal.
