- 1 lb boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
- 10–12 slices of bacon, cut in half
- Salt and freshly ground black pepper, to taste
- 1/4 cup pure maple syrup
- 2 tbsp Dijon mustard
- 1 tsp lime juice
- Toothpicks
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or foil.
- Prepare the Chicken and Bacon: Season the chicken pieces with salt and pepper. Wrap each piece of chicken with a half-slice of bacon and secure it with a toothpick.
- Make the Maple Glaze: In a small bowl, whisk together the maple syrup, Dijon mustard, and lime juice.
- Bake and Glaze: Arrange the bacon-wrapped chicken bites on the prepared baking sheet. Brush the tops with the maple glaze. Bake for 15 minutes.
- Flip and Glaze Again: Remove from the oven, flip each chicken bite, and brush with additional glaze. Return to the oven and bake for another 15 minutes, or until the bacon is crispy and the chicken is cooked through.
- Serve: Serve warm, optionally with dipping sauces like ranch or blue cheese dressing.

- Grill Option: Grill the bites over medium heat for 10 minutes per side, brushing with glaze halfway through.
- Air Fryer Option: Cook in an air fryer at 375°F (190°C) for 12-15 minutes, shaking halfway.
