Description

This mandarin chicken salad is crisp, refreshing, and packed with flavor. Juicy mandarin oranges, tender chicken, crunchy almonds, and crisp greens come together with a tangy-sweet Asian-inspired dressing. It’s perfect for a light lunch, picnic, or easy weeknight meal.


Ingredients

For the Salad:

  • 4 cups chopped romaine or mixed greens

  • 2 cups cooked chicken breast, sliced or shredded

  • 1 (15 oz) can mandarin oranges, drained

  • 1 cup shredded carrots

  • 1/2 cup thinly sliced red cabbage

  • 1/4 cup green onions, sliced

  • 1/3 cup sliced almonds or chow mein noodles

  • 1 tablespoon sesame seeds (optional)

For the Dressing:

 

  • 1/4 cup rice vinegar

  • 2 tablespoons soy sauce or tamari

  • 2 tablespoons honey or maple syrup

  • 1 tablespoon sesame oil

  • 1/4 cup neutral oil (like canola or avocado)

  • 1 teaspoon grated ginger

  • 1 clove garlic, minced

  • Optional: 1 teaspoon Dijon mustard or a squeeze of lime juice


Instructions

  1. In a small bowl or jar, whisk together all the dressing ingredients until well combined. Set aside.

  2. In a large salad bowl, combine greens, chicken, mandarin oranges, carrots, cabbage, and green onions.

  3. Drizzle dressing over the salad and toss gently to combine.

  4. Top with sliced almonds or chow mein noodles and sesame seeds.

  5. Serve immediately for the best texture and freshness.


Notes

  • You can use rotisserie chicken or grilled chicken for convenience.

  • Add avocado or edamame for extra creaminess and protein.
