Ingredients

1/2 cup plain mashed potatoes (no butter or seasoning)

4-5 cups powdered sugar, plus extra for rolling

Instructions

In a large bowl, mix mashed potatoes and vanilla extract until smooth.

Gradually add powdered sugar, 1 cup at a time, mixing well after each addition. The dough should become thick, smooth, and easy to roll—similar to cookie dough.

Dust a clean surface with powdered sugar and roll the dough into a rectangle about 1/4 inch thick.

Spread an even layer of peanut butter over the dough.

Carefully roll the dough into a tight log, just like a jelly roll. If it sticks, use parchment paper to help guide the roll.
