For the Cake:
- 2 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup unsalted butter (softened)
- 1 1/2 cups granulated sugar
- 3 large eggs
- 1 tbsp vanilla extract
- 1/2 cup whole milk (or buttermilk)
- 1 cup mashed ripe bananas (about 2 large bananas)
- 1 cup chopped walnuts

- 8 oz cream cheese (softened)
- 1/2 cup unsalted butter (softened)
- 3 cups powdered sugar
- 1 tsp vanilla extract
- 1/4 cup chopped walnuts (for garnish)
Instructions
Make the Cake:
- Preheat and Prepare the Pan:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or two 8-inch round cake pans.
- Mix the Dry Ingredients:
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- Cream Butter and Sugar:
- In a large bowl, cream the butter and sugar until light and fluffy. Beat in the eggs one at a time, then add the vanilla extract.
- Combine the Wet Ingredients:
- Add the mashed bananas to the butter mixture and mix until well combined.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Fold in Walnuts:
- Gently fold in the chopped walnuts.
- Bake the Cake:
- Pour the batter into the prepared pan(s) and spread evenly. Bake for 30-35 minutes (for a 9×13 pan) or 25-30 minutes (for round pans), or until a toothpick inserted into the center comes out clean. Let the cake cool completely before frosting.
Make the Cream Cheese Frosting (Optional):
- Prepare the Frosting:
- Beat the cream cheese and butter together until smooth. Gradually add the powdered sugar, one cup at a time, until fully incorporated. Stir in the vanilla extract.
- Frost the Cake:
- Spread the frosting evenly over the cooled cake. Sprinkle chopped walnuts on top for garnish.

- For a healthier version, replace half the butter with applesauce and use whole wheat flour.
