These Loaded Smothered Beef Burritos are stuffed with seasoned ground beef, beans, and rice, then topped with a rich red enchilada sauce and gooey melted cheese. Baked to perfection, they’re a hearty, comforting meal the whole family will love.
Ingredients
For the Burritos:

1 lb ground beef

1 packet taco seasoning (or 2 tbsp homemade taco seasoning)

1/2 cup water

1 cup cooked rice
-
1 can (15 oz) refried beans

1/2 cup salsa

6 large flour tortillas

1 cup shredded cheddar cheese (for inside burritos)
For the Smothered Topping:

2 cups red enchilada sauce

1 1/2 cups shredded Mexican blend cheese

1/4 cup chopped green onions (optional)
-
1/4 cup chopped fresh cilantro (optional)

Sour cream, for serving (optional)
Instructions

Preheat oven to 375°F (190°C).

In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat.

Add taco seasoning and water. Stir and simmer for 5 minutes until thickened.

In a large bowl, mix cooked rice, refried beans, salsa, and 1 cup of shredded cheddar cheese. Add the cooked beef and stir to combine.

Lay out a tortilla, place about 1/2 to 2/3 cup of the filling mixture in the center, and roll up burrito-style. Repeat with remaining tortillas.

Place burritos seam-side down in a greased 9×13-inch baking dish.

Pour enchilada sauce evenly over the burritos. Top with shredded Mexican blend cheese.

Bake uncovered for 20–25 minutes, or until cheese is melted and bubbly.

Remove from oven and top with chopped green onions, cilantro, and a dollop of sour cream if desired.
