- 4 large russet potatoes, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and black pepper to taste
- 1/2 cup crumbled feta cheese
- 1/2 cup cherry tomatoes, diced
- 1/4 cup Kalamata olives, sliced
- 1/4 small red onion, finely sliced
- 2 tablespoons chopped fresh parsley
- 1/2 cup tzatziki sauce (for drizzling)
Instructions
- Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Toss potato wedges with olive oil, garlic powder, oregano, salt, and pepper.
- Spread wedges in a single layer on the prepared baking sheet.
- Bake for 35–40 minutes, flipping halfway through, until golden brown and crispy.
- Transfer to a serving platter and immediately top with feta, tomatoes, olives, red onion, and parsley.
- Drizzle with tzatziki sauce and serve warm.
Notes
- For extra crispiness, soak potato wedges in cold water for 30 minutes before baking and pat dry thoroughly.
- Make it vegan by using dairy-free feta and tahini sauce instead of tzatziki.
- Can also be made in the air fryer at 400°F for 20–25 minutes.
