Description

Crispy potato wedges loaded with Mediterranean flavors including feta cheese, olives, tomatoes, and a drizzle of creamy tzatziki—perfect as a hearty appetizer or flavorful side dish.


Ingredients

  • 4 large russet potatoes, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup crumbled feta cheese
  • 1/2 cup cherry tomatoes, diced
  • 1/4 cup Kalamata olives, sliced
  • 1/4 small red onion, finely sliced
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup tzatziki sauce (for drizzling)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Toss potato wedges with olive oil, garlic powder, oregano, salt, and pepper.
  3. Spread wedges in a single layer on the prepared baking sheet.
  4. Bake for 35–40 minutes, flipping halfway through, until golden brown and crispy.
  5. Transfer to a serving platter and immediately top with feta, tomatoes, olives, red onion, and parsley.
  6. Drizzle with tzatziki sauce and serve warm.

Notes

  • For extra crispiness, soak potato wedges in cold water for 30 minutes before baking and pat dry thoroughly.
  • Make it vegan by using dairy-free feta and tahini sauce instead of tzatziki.
  • Can also be made in the air fryer at 400°F for 20–25 minutes.
