Description

A hearty and comforting one-pan meal made with seasoned ground beef, tender potatoes, vegetables, and melted cheese – perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 3 medium russet potatoes, diced
  • 1 small onion, diced
  • 1 green bell pepper, chopped
  • 1 cup shredded cheddar cheese
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1/4 cup chopped green onions (optional garnish)
  • Sour cream, for serving (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add diced potatoes and cook until browned and tender, about 10-12 minutes. Remove and set aside.
  3. In the same skillet, add ground beef and cook until browned, breaking it apart with a spatula.
  4. Add onion, bell pepper, and garlic; cook until softened, about 5 minutes.
  5. Return the potatoes to the skillet and stir to combine.
  6. Season with smoked paprika, oregano, salt, and pepper.
  7. Sprinkle shredded cheddar cheese over the top. Cover and cook for 2-3 minutes, until cheese is melted.
  8. Garnish with chopped green onions if desired and serve with sour cream.

Notes

  • Use Yukon Gold or red potatoes for a creamier texture.
  • Can be made ahead and reheated for a quick meal.
  • Try adding corn or black beans for extra flavor and nutrition.
