- 1 lb ground beef
- 3 medium russet potatoes, diced
- 1 small onion, diced
- 1 green bell pepper, chopped
- 1 cup shredded cheddar cheese
- 2 cloves garlic, minced
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- Salt and pepper, to taste
- 2 tbsp olive oil
- 1/4 cup chopped green onions (optional garnish)
- Sour cream, for serving (optional)
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced potatoes and cook until browned and tender, about 10-12 minutes. Remove and set aside.
- In the same skillet, add ground beef and cook until browned, breaking it apart with a spatula.
- Add onion, bell pepper, and garlic; cook until softened, about 5 minutes.
- Return the potatoes to the skillet and stir to combine.
- Season with smoked paprika, oregano, salt, and pepper.
- Sprinkle shredded cheddar cheese over the top. Cover and cook for 2-3 minutes, until cheese is melted.
- Garnish with chopped green onions if desired and serve with sour cream.
Notes
- Use Yukon Gold or red potatoes for a creamier texture.
- Can be made ahead and reheated for a quick meal.
- Try adding corn or black beans for extra flavor and nutrition.
