Description

This hearty, one-pan breakfast is loaded with crispy potatoes, eggs, melty cheese, and your favorite toppings. Perfect for a weekend brunch or a filling start to your day!


Ingredients

  • 4 medium potatoes, diced (or 2 cups frozen hash browns)
  • 1 tbsp olive oil
  • 1/2 onion, diced
  • 1/2 bell pepper, diced
  • 4 strips bacon, chopped (or 1/2 cup cooked sausage)
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • Salt & pepper, to taste
  • 4 eggs
  • 1/2 cup shredded cheddar cheese
  • 2 tbsp chopped green onions (for garnish)
  • 1/2 avocado, sliced (optional)

Instructions

1. Cook the Potatoes

  1. Heat olive oil in a large skillet over medium heat.
  2. Add potatoes, season with garlic powder, paprika, salt, and pepper, and cook for 10-12 minutes, stirring occasionally, until golden and crispy.

2. Add the Veggies & Meat

  1. Add onion, bell pepper, and bacon to the skillet.
  2. Cook for 5-7 minutes, until veggies are soft and bacon is crispy.

3. Cook the Eggs

  1. Make 4 small wells in the potato mixture.
  2. Crack 1 egg into each well. Cover the skillet and cook for 5 minutes, or until eggs are set to your liking.

4. Add Cheese & Serve

  1. Sprinkle with cheddar cheese, cover for 1 minute to melt.
  2. Garnish with green onions and avocado slices. Serve hot!



Notes

  • Swap bacon for sausage, ham, or black beans for variety.
  • For a spicy kick, add jalapeños or hot sauce.
  • Make it vegetarian by skipping the bacon and adding mushrooms or spinach.
