Description

A lighter version of classic chicken salad made with Greek yogurt, crunchy veggies, and fresh herbs — perfect for sandwiches, wraps, or lettuce cups.


Ingredients

  • 2 cups cooked chicken breast, diced or shredded
  • 1/3 cup plain Greek yogurt
  • 2 tbsp light mayonnaise
  • 1 celery stalk, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup diced cucumber or apple (optional)
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp fresh lemon juice
  • Salt and black pepper to taste
  • Optional: lettuce leaves or whole grain bread for serving

Instructions

  1. In a medium bowl, combine Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Stir until smooth.
  2. Add diced chicken, celery, red onion, cucumber or apple (if using), and fresh parsley. Mix until evenly coated.
  3. Taste and adjust seasoning as needed.
  4. Serve chilled on whole grain bread, in lettuce wraps, or over salad greens.

Notes

  • Use rotisserie chicken to save time.
  • Swap Greek yogurt for all the mayo for an even lighter option.
  • Add grapes or dried cranberries for a touch of sweetness.
