Description
A lighter version of classic chicken salad made with Greek yogurt, crunchy veggies, and fresh herbs — perfect for sandwiches, wraps, or lettuce cups.

- 2 cups cooked chicken breast, diced or shredded
- 1/3 cup plain Greek yogurt
- 2 tbsp light mayonnaise
- 1 celery stalk, finely chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup diced cucumber or apple (optional)
- 2 tbsp fresh parsley, chopped
- 1 tbsp Dijon mustard
- 1 tbsp fresh lemon juice
- Salt and black pepper to taste
- Optional: lettuce leaves or whole grain bread for serving
Instructions
- In a medium bowl, combine Greek yogurt, mayonnaise, Dijon mustard, lemon juice, salt, and pepper. Stir until smooth.
- Add diced chicken, celery, red onion, cucumber or apple (if using), and fresh parsley. Mix until evenly coated.
- Taste and adjust seasoning as needed.
- Serve chilled on whole grain bread, in lettuce wraps, or over salad greens.
Notes
- Use rotisserie chicken to save time.
- Swap Greek yogurt for all the mayo for an even lighter option.
- Add grapes or dried cranberries for a touch of sweetness.
