- 2 tbsp fresh lemon juice
- 1 tsp vanilla extract
- 1/2 tsp lemon extract (optional, for extra lemon flavor)
- 1/2 cup granulated sugar (for rolling)
Instructions
Step 1: Prepare the Dough
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
Step 2: Cream the Butter & Sugar
- In a large bowl, beat butter and sugar together until light and fluffy (about 2 minutes).
- Add egg, lemon zest, lemon juice, vanilla extract, and lemon extract (if using). Beat until smooth.
Step 3: Combine & Chill
- Gradually mix in the dry ingredients until just combined.
- Cover and chill the dough for 30 minutes (optional, but helps with rolling).
Step 4: Roll & Bake
- Roll dough into 1-inch balls, then roll in granulated sugar to coat.
- Place cookies 2 inches apart on the prepared baking sheet.
- Bake for 8–10 minutes, or until edges are set but centers are soft.
- Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack.
