- 12 oz spaghetti or linguine
- 1/4 cup unsalted butter
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1 tbsp lemon zest
- 1/4 cup fresh lemon juice
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and black pepper, to taste
- Extra lemon wedges, for serving
Instructions
- Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water, then drain.
- In a large skillet over medium heat, melt butter with olive oil. Add minced garlic and cook for 30 seconds until fragrant.
- Stir in lemon zest and lemon juice.
- Add cooked pasta to the skillet and toss to coat, adding reserved pasta water a little at a time until desired sauciness is reached.
- Remove from heat and stir in Parmesan and parsley. Season with salt and black pepper to taste.
- Serve immediately with extra lemon wedges and more Parmesan if desired.
