- 1 cup lemon-lime soda (such as Sprite or 7UP)
- 1/3 cup vegetable oil
- 3 large eggs
- 1 tablespoon lemon zest
For the frosting:
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 2 tablespoons lemon-lime soda
- 1/2 teaspoon vanilla extract
- Zest of 1 lime or lemon (optional for garnish)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- In a large bowl, combine cake mix, lemon-lime soda, oil, eggs, and lemon zest. Beat on medium speed for 2 minutes until smooth.
- Divide batter evenly among cupcake liners, filling each about 2/3 full.
- Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
- For the frosting, beat butter until creamy. Gradually add powdered sugar, alternating with lemon-lime soda, and beat until fluffy. Mix in vanilla extract.
- Frost cooled cupcakes and garnish with citrus zest if desired. Serve and enjoy!
Notes
- You can substitute the soda with lemon-lime flavored sparkling water for a lighter version.
