Description

Lemon Lime Soda Cupcakes are light, fluffy treats infused with the citrusy fizz of lemon-lime soda. These easy-to-make cupcakes are bursting with bright flavor and topped with a zesty frosting — perfect for parties and spring or summer celebrations.


Ingredients

  • 1 cup lemon-lime soda (such as Sprite or 7UP)
  • 1/3 cup vegetable oil
  • 3 large eggs
  • 1 tablespoon lemon zest

For the frosting:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons lemon-lime soda
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. In a large bowl, combine cake mix, lemon-lime soda, oil, eggs, and lemon zest. Beat on medium speed for 2 minutes until smooth.
  3. Divide batter evenly among cupcake liners, filling each about 2/3 full.
  4. Bake for 18–20 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  5. For the frosting, beat butter until creamy. Gradually add powdered sugar, alternating with lemon-lime soda, and beat until fluffy. Mix in vanilla extract.
