- 1 can (15 oz) chickpeas, drained and rinsed
- 1/4 cup fresh lemon juice (about 1 large lemon)
- 1/4 cup tahini
- 1 small garlic clove, minced
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon ground cumin (optional)
- 2–3 tablespoons water (as needed for consistency)
- Zest of 1 lemon
Instructions
- In a food processor, combine tahini and lemon juice. Process for 1 minute until creamy and whipped.
- Add garlic, olive oil, salt, cumin (if using), and lemon zest. Blend until smooth.
- Add chickpeas and process for 1–2 minutes, scraping down sides as needed.
- With the processor running, add water one tablespoon at a time until desired consistency is reached.
- Taste and adjust seasoning. Chill before serving for best flavor.
- Drizzle with olive oil and garnish with extra lemon zest or chopped herbs before serving.
Notes
- For extra smooth hummus, peel the chickpeas before blending.
- Use roasted garlic for a milder, deeper flavor.
- Serve with pita, veggies, or use as a sandwich spread.
