- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 (8 oz) package cream cheese, softened
- 1 cup powdered sugar
- 1 (8 oz) container whipped topping, thawed
- 1 (3.4 oz) package instant lemon pudding mix
- 1 1/2 cups cold milk
- 1 cup blueberry pie filling or fresh blueberries
- Optional: lemon zest for garnish
Instructions
- In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press the mixture firmly into the bottom of a 9×9 inch pan to form the crust. Chill in the refrigerator for 15 minutes.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- Fold in half of the whipped topping until light and fluffy. Spread evenly over the chilled crust.
- In a separate bowl, whisk together the lemon pudding mix and cold milk for 2 minutes until thickened.
- Spread the lemon pudding over the cream cheese layer.
- Top with the remaining whipped topping and spread evenly.
- Spoon blueberry pie filling or fresh blueberries over the top layer.
- Refrigerate for at least 4 hours, or until set.
- Garnish with lemon zest before serving if desired.
