Description

Lemon Blueberry Delight is a refreshing layered dessert featuring a buttery crust, creamy lemon filling, and sweet blueberry topping—perfect for spring and summer gatherings.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) container whipped topping, thawed
  • 1 (3.4 oz) package instant lemon pudding mix
  • 1 1/2 cups cold milk
  • 1 cup blueberry pie filling or fresh blueberries
  • Optional: lemon zest for garnish

Instructions

  1. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined.
  2. Press the mixture firmly into the bottom of a 9×9 inch pan to form the crust. Chill in the refrigerator for 15 minutes.
  3. In another bowl, beat the cream cheese and powdered sugar until smooth.
  4. Fold in half of the whipped topping until light and fluffy. Spread evenly over the chilled crust.
  5. In a separate bowl, whisk together the lemon pudding mix and cold milk for 2 minutes until thickened.
  6. Spread the lemon pudding over the cream cheese layer.
  7. Top with the remaining whipped topping and spread evenly.
  8. Spoon blueberry pie filling or fresh blueberries over the top layer.
  9. Refrigerate for at least 4 hours, or until set.
  10. Garnish with lemon zest before serving if desired.

  • Use fresh blueberries for a lighter, less sweet version.
