Ingredients

Units Scale
  • 2 tbsp olive oil or butter
  • 1 medium onion, diced
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 garlic cloves, minced
  • 6 cups turkey or chicken broth (homemade or store-bought)
  • 2 cups cooked turkey, shredded or diced
  • 1 cup potatoes, diced (or substitute with cooked rice or pasta)
  • 1 tsp dried thyme
  • 1 tsp dried parsley (or 2 tbsp fresh parsley, chopped)
  • 1/2 tsp dried rosemary
  • Salt and pepper to taste
  • Optional: 1 cup frozen peas or corn (added near the end of cooking)

Instructions

1. Sauté the Vegetables:

  1. Heat olive oil or butter in a large pot over medium heat.

  2. Stir in the shredded turkey, thyme, parsley, rosemary, salt, and pepper.

3. Add Potatoes (or Rice/Pasta):

  1. Add the diced potatoes to the pot and simmer for 15-20 minutes, or until tender.
    • If using cooked rice or pasta, stir it in during the last 5 minutes of cooking.

4. Add Optional Vegetables:

  1. If adding frozen peas or corn, stir them into the soup during the last 5 minutes of cooking.

5. Adjust Seasoning and Serve:

  1. Taste the soup and adjust the salt and pepper if needed.
  2. Serve hot with crusty bread or crackers for a complete meal.

Notes

  • Storage: Store leftover soup in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave.
  • Freezing: Freeze the soup in portions for up to 3 months. Thaw in the refrigerator overnight before reheating.
  • Customization: Add your favorite herbs or vegetables, or stir in a splash of cream for a richer soup.
