- 2 tbsp olive oil or butter
- 1 medium onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 3 garlic cloves, minced
- 6 cups turkey or chicken broth (homemade or store-bought)
- 2 cups cooked turkey, shredded or diced
- 1 cup potatoes, diced (or substitute with cooked rice or pasta)
- 1 tsp dried thyme
- 1 tsp dried parsley (or 2 tbsp fresh parsley, chopped)
- 1/2 tsp dried rosemary
- Salt and pepper to taste
- Optional: 1 cup frozen peas or corn (added near the end of cooking)
Instructions
1. Sauté the Vegetables:
- Heat olive oil or butter in a large pot over medium heat.
- Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until the vegetables soften.
- Stir in the minced garlic and cook for an additional minute until fragrant.
2. Add the Broth and Turkey:
- Pour in the turkey or chicken broth. Bring to a simmer.
- Stir in the shredded turkey, thyme, parsley, rosemary, salt, and pepper.
3. Add Potatoes (or Rice/Pasta):
- Add the diced potatoes to the pot and simmer for 15-20 minutes, or until tender.
- If using cooked rice or pasta, stir it in during the last 5 minutes of cooking.
4. Add Optional Vegetables:
- If adding frozen peas or corn, stir them into the soup during the last 5 minutes of cooking.
5. Adjust Seasoning and Serve:
- Taste the soup and adjust the salt and pepper if needed.
- Serve hot with crusty bread or crackers for a complete meal.
Notes
- Storage: Store leftover soup in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave.
