Description

Tangy, creamy, and irresistibly refreshing, these Key Lime Pie Bars feature a buttery graham cracker crust and a smooth lime filling, perfect for a handheld version of the classic pie.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tbsp unsalted butter, melted
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup key lime juice (fresh or bottled)
  • 1 tbsp key lime zest
  • Whipped cream for topping (optional)
  • Lime slices or zest for garnish (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of the prepared pan.
  3. Bake crust for 8-10 minutes until lightly golden. Let cool slightly.
  4. In a mixing bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth and creamy.
  5. Pour the filling over the baked crust and spread evenly.
  6. Bake for 15-18 minutes or until the center is just set. Cool to room temperature, then refrigerate for at least 2 hours.
  7. Once chilled, lift the bars out using parchment overhang and cut into squares.
  8. Top with whipped cream and lime zest or slices before serving, if desired.

Notes

  • Regular lime juice can be used if key lime juice is unavailable.
  • Bars can be stored in the fridge for up to 3 days.
  • Make sure to chill completely before slicing for clean cuts.
