- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 6 tbsp unsalted butter, melted
- 4 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- 1/2 cup key lime juice (fresh or bottled)
- 1 tbsp key lime zest
- Whipped cream for topping (optional)
- Lime slices or zest for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang for easy removal.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined. Press into the bottom of the prepared pan.
- Bake crust for 8-10 minutes until lightly golden. Let cool slightly.
- In a mixing bowl, whisk together egg yolks, sweetened condensed milk, key lime juice, and lime zest until smooth and creamy.
- Pour the filling over the baked crust and spread evenly.
- Bake for 15-18 minutes or until the center is just set. Cool to room temperature, then refrigerate for at least 2 hours.
- Once chilled, lift the bars out using parchment overhang and cut into squares.
- Top with whipped cream and lime zest or slices before serving, if desired.
Notes
- Regular lime juice can be used if key lime juice is unavailable.
- Bars can be stored in the fridge for up to 3 days.
- Make sure to chill completely before slicing for clean cuts.
