- 1 lb thinly sliced beef steak (ribeye or sirloin)
- 1 tablespoon olive oil
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 slices provolone cheese
- Optional: 8 slices deli roast beef (for easier rolling if not using whole steak)
Instructions
- Heat olive oil in a skillet over medium-high heat. Add onions and bell peppers and sauté until soft and caramelized, about 7-8 minutes.
- Season the beef with garlic powder, salt, and pepper. Add to skillet and cook until browned and cooked through, about 3-5 minutes.
- Lay out a slice of provolone cheese on each piece of steak or deli beef.
- Place a spoonful of the beef and pepper mixture on one end of the cheese-topped steak and roll it up tightly.
- Optional: Place roll ups in a baking dish and broil for 1-2 minutes until cheese is melted and bubbly.
- Serve warm as a low-carb main or appetizer.
