Description

This Keto Breakfast Casserole is a hearty, low-carb dish that’s perfect for meal prep or feeding a crowd. Packed with eggs, cheese, sausage, and veggies, it’s a satisfying and delicious way to start your day while staying keto-friendly.

  • 1/2 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 lb breakfast sausage (ground, no sugar added)
  • 1/2 cup bell peppers (diced, any color)
  • 1/2 cup spinach (chopped)
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat the oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with cooking spray or butter.
  2. Cook the sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked. Drain any excess grease and set aside.
  3. Prepare the egg mixture: In a large mixing bowl, whisk together eggs, heavy cream, garlic powder, onion powder, salt, and pepper until well combined.
  4. Assemble the casserole: Spread the cooked sausage evenly over the bottom of the prepared baking dish. Sprinkle the diced bell peppers, spinach, and shredded cheddar cheese over the sausage.
  5. Pour the eggs: Pour the egg mixture evenly over the ingredients in the baking dish. Sprinkle the mozzarella cheese on top.
  6. Bake: Bake in the preheated oven for 30–35 minutes, or until the eggs are set and the top is golden brown.
  7. Serve: Let the casserole cool for 5–10 minutes before slicing and serving.
