Description

These rich and chewy Keto Blondies are made with almond flour, a sugar-free sweetener, and chocolate chips for a low-carb treat that doesn’t compromise on flavor. Perfect for satisfying sweet cravings while staying keto-friendly!

Ingredients

Units Scale
  • 1/2 cup (115g) unsalted butter, melted
  • 1/3 cup (70g) granulated erythritol or your favorite keto-friendly sweetener
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (150g) almond flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup (60g) sugar-free chocolate chips

Instructions

1. Preheat the Oven:
  • Preheat your oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper and lightly grease it.
2. Mix Wet Ingredients:
  1. In a large mixing bowl, whisk together the melted butter, erythritol, egg, and vanilla extract until well combined.
3. Add Dry Ingredients:
  1. Add the almond flour, baking powder, and salt to the wet ingredients. Stir until a thick batter forms.
  2. Fold in the sugar-free chocolate chips.
4. Bake:
  1. Spread the batter evenly into the prepared baking pan. Smooth the top with a spatula.
  2. Bake in the preheated oven for 20–25 minutes, or until the edges are golden and the center is set but still slightly soft.
5. Cool and Slice:
  1. Let the blondies cool completely in the pan before slicing into squares.
  2. Serve and enjoy!

Notes

  • For extra flavor, sprinkle a pinch of sea salt over the top before baking.
  • Add-ins like chopped nuts or shredded coconut can be included for variety.
  • Store leftovers in an airtight container at room temperature for up to 3 days, or in the fridge for up to a week.
