Description

  • 500 ml (2 cups) beef broth
  • 250 ml (1 cup) heavy cream
  • 200 g (2 cups) shredded cheddar cheese
  • 1 teaspoon mustard (Dijon or yellow)
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon butter (optional, for extra richness)
  • Chopped pickles and green onions for garnish (optional)



Instructions

🍳 Cooking the Soup:

  1. Cook the Bacon:

    • In a large pot or Dutch oven, cook the bacon over medium heat until crispy.
    • Remove bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
  2. Brown the Beef:

    • Add the ground beef to the pot and cook until browned, breaking it up into small pieces.
    • Drain excess fat if necessary.
  3. Sauté Vegetables:

    • Add the onion, garlic, celery, and carrot (if using) to the pot.
    • Sauté until the vegetables are tender (5 minutes).
  4. Add Broth and Seasonings:

    • Stir in the beef broth, mustard, Worcestershire sauce, smoked paprika, parsley, salt, and pepper.
    • Bring to a gentle simmer.
  5. Make it Creamy:

    • Reduce heat to low and add the heavy cream and butter (if using).

  6. Add Cheese and Bacon:

    • Gradually stir in the shredded cheddar cheese until melted and smooth.
