Instructions
🍳 Cooking the Soup:

Cook the Bacon:
- In a large pot or Dutch oven, cook the bacon over medium heat until crispy.
- Remove bacon with a slotted spoon and set aside, leaving the bacon fat in the pot.
-
Brown the Beef:
- Add the ground beef to the pot and cook until browned, breaking it up into small pieces.
- Drain excess fat if necessary.
-
Sauté Vegetables:
- Add the onion, garlic, celery, and carrot (if using) to the pot.
- Sauté until the vegetables are tender (5 minutes).
-
Add Broth and Seasonings:
- Stir in the beef broth, mustard, Worcestershire sauce, smoked paprika, parsley, salt, and pepper.
- Bring to a gentle simmer.
-
Make it Creamy:
- Reduce heat to low and add the heavy cream and butter (if using).
- Stir until the butter melts and the soup is creamy.
-
Add Cheese and Bacon:
- Gradually stir in the shredded cheddar cheese until melted and smooth.
- Add the cooked bacon, reserving some for garnish.
🥄 Serving the Soup:
-
Garnish:
- Top with extra shredded cheese, crispy bacon bits, chopped pickles, and green onions if desired.

Serve:
- Enjoy hot, and if you need more crunch, serve with low-carb croutons or pork rinds.
