- 1 (15.25-ounce) box yellow or white cake mix
- 1 (20-ounce) can crushed pineapple (with juice)
- 3 large eggs
- 1/2 cup vegetable oil
For the Topping:
- 1 (8-ounce) container whipped topping (Cool Whip)
- 1 (3.4-ounce) box instant vanilla pudding mix
- 1 cup cold milk
- 1/2 cup crushed pineapple (drained)
- 1/2 cup shredded coconut (optional)
- 1/4 cup chopped pecans or walnuts (optional)

Preheat & Prepare the Cake Batter:
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix cake mix, crushed pineapple (with juice), eggs, and oil until well combined.

- Pour batter into the prepared baking dish and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool completely.

- In a bowl, whisk together vanilla pudding mix and cold milk until smooth. Let sit for 5 minutes to thicken.
