John Wayne Casserole is a hearty, flavorful dish that layers seasoned ground beef, vegetables, and a creamy cheese mixture over a biscuit crust. This comforting casserole is perfect for family dinners and gatherings.

  • 1 can (16.3 ounces) refrigerated biscuit dough
  • 2 pounds ground beef
  • 1 packet (1 ounce) taco seasoning mix
  • ¾ cup water
  • 1 medium onion, sliced
  • 1 medium red bell pepper, sliced
  • ½ cup sour cream
  • ½ cup mayonnaise
  • 8 ounces shredded cheddar cheese, divided
  • 2 medium tomatoes, sliced
  • 1 can (4 ounces) sliced jalapeño peppers, drained (optional)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C).
  • Prepare Biscuit Crust: Press the biscuit dough into the bottom and slightly up the sides of a 9×13-inch baking dish. Bake in the preheated oven for 15 minutes or until lightly browned.
  • Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until browned and crumbly. Drain excess fat. Stir in the taco seasoning and ¾ cup water. Bring to a boil, reduce heat, and simmer for 5 minutes. Transfer the meat mixture to a bowl.
  • Sauté Vegetables: In the same skillet, cook the sliced onions and red bell peppers over medium heat until tender, about 5 minutes.
  • Mix Creamy Layer: In a bowl, combine sour cream, mayonnaise, half of the shredded cheddar cheese, and half of the sautéed onion and pepper mixture.
  • Assemble Casserole: Layer the cooked ground beef over the baked biscuit crust. Top with the remaining sautéed onions and peppers. Arrange sliced tomatoes and jalapeño peppers (if using) over the vegetables. Spread the sour cream mixture evenly on top. Sprinkle with the remaining shredded cheddar cheese.
  • Bake: Bake in the preheated oven for 30-35 minutes, or until the cheese is melted and bubbly.
  • Serve: Let the casserole rest for a few minutes before serving.

Notes

  • For a spicier version, add more jalapeño peppers or use a spicy taco seasoning mix.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
