This copycat Joe & The Juice Tuna Sandwich delivers the same delicious combo of creamy tuna, fresh tomato, and punchy pesto on thin, crisp bread. It’s easy to make at home and tastes just like the real thing—light, flavorful, and totally satisfying.
Ingredients
For the Tuna Mousse:

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Greek yogurt or sour cream (optional for extra creaminess)

1/2 teaspoon Dijon mustard

Salt and pepper, to taste
For the Sandwich:

2 slices thin sandwich bread (like rye, sourdough, or panini bread)

2 tablespoons basil pesto (store-bought or homemade)

2-3 slices of fresh tomato

Butter or olive oil, for grilling

Make the tuna mousse: In a bowl, mix together tuna, mayo, Greek yogurt (if using), Dijon mustard, salt, and pepper until smooth and creamy. You can blend briefly with a hand mixer or food processor for a mousse-like texture.

Assemble the sandwich: Spread pesto on one slice of bread. Spread a generous layer of tuna mousse on the other slice. Add tomato slices on top of the tuna.

Close the sandwich and lightly butter the outside or brush with olive oil.

Toast it: Grill in a sandwich press, panini maker, or skillet over medium heat until the bread is golden and crisp, and the filling is warmed through—about 3–4 minutes per side.
