Description

Jerk Chicken Tacos combine the bold, spicy-sweet flavors of Jamaican jerk chicken with fresh toppings in soft taco shells. A delicious twist on taco night.


Ingredients

  • 1.5 pounds boneless, skinless chicken thighs
  • 2 tablespoons jerk seasoning (store-bought or homemade)
  • 1 tablespoon olive oil
  • Juice of 1 lime
  • 1 tablespoon soy sauce
  • 8 small flour or corn tortillas
  • 1 cup shredded lettuce or cabbage
  • 1/2 cup diced pineapple
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup chopped cilantro
  • 1/4 cup sour cream or Greek yogurt (optional, for serving)
  • Hot sauce or jerk sauce (optional)

Instructions

  1. In a bowl, combine jerk seasoning, olive oil, lime juice, and soy sauce. Add chicken and toss to coat. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
  2. Heat a grill or skillet over medium-high heat. Cook chicken for 6–7 minutes per side, or until cooked through and nicely charred. Let rest for 5 minutes, then slice into strips.
  3. Warm tortillas on the grill or in a skillet for 30 seconds per side.
  4. Assemble tacos by layering sliced chicken, lettuce or cabbage, pineapple, red onion, and cilantro in tortillas.
  5. Top with sour cream or Greek yogurt and hot sauce, if desired. Serve immediately.

Notes

  • Adjust the amount of jerk seasoning based on your spice preference.
  • Grilled pineapple makes a great addition or topping for extra flavor.
  • Double the recipe for parties or meal prep.
