Description
Jerk Chicken Tacos combine the bold, spicy-sweet flavors of Jamaican jerk chicken with fresh toppings in soft taco shells. A delicious twist on taco night.

- 1.5 pounds boneless, skinless chicken thighs
- 2 tablespoons jerk seasoning (store-bought or homemade)
- 1 tablespoon olive oil
- Juice of 1 lime
- 1 tablespoon soy sauce
- 8 small flour or corn tortillas
- 1 cup shredded lettuce or cabbage
- 1/2 cup diced pineapple
- 1/4 cup red onion, thinly sliced
- 1/4 cup chopped cilantro
- 1/4 cup sour cream or Greek yogurt (optional, for serving)
- Hot sauce or jerk sauce (optional)
Instructions
- In a bowl, combine jerk seasoning, olive oil, lime juice, and soy sauce. Add chicken and toss to coat. Marinate for at least 30 minutes or up to 4 hours in the refrigerator.
- Heat a grill or skillet over medium-high heat. Cook chicken for 6–7 minutes per side, or until cooked through and nicely charred. Let rest for 5 minutes, then slice into strips.
- Warm tortillas on the grill or in a skillet for 30 seconds per side.
- Assemble tacos by layering sliced chicken, lettuce or cabbage, pineapple, red onion, and cilantro in tortillas.
- Top with sour cream or Greek yogurt and hot sauce, if desired. Serve immediately.
Notes
- Adjust the amount of jerk seasoning based on your spice preference.
- Grilled pineapple makes a great addition or topping for extra flavor.
- Double the recipe for parties or meal prep.
