- 2 1/2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 3 oz package of Jello (choose any flavor, or multiple flavors for variety)
- Optional: Additional Jello powder for rolling (for extra color)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until fully incorporated.
- Add Jello and Dry Ingredients: Mix in the Jello powder, stirring until the color and flavor are well combined. Gradually add the flour mixture, mixing until a soft dough forms.
- Shape the Cookies: Scoop tablespoon-sized balls of dough and roll them in your hands. If you want extra color, roll each dough ball in additional Jello powder before placing it on the baking sheet.
- Bake: Place the cookies on the prepared baking sheets, about 2 inches apart. Press each ball down slightly with the bottom of a glass to flatten. Bake for 8-10 minutes, or until the edges are just set (cookies will continue to firm up as they cool).
- Cool and Serve: Let the cookies cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.
Notes
- For a variety of colors, divide the dough and mix in different Jello flavors to create multiple colors.
- Store cookies in an airtight container for up to a week.
