Description

These Jello Cookies are colorful, soft, and full of fruity flavor! Made with flavored gelatin powder, these cookies are a fun treat for kids and adults alike. Customize them with your favorite Jello flavors to create vibrant, eye-catching cookies perfect for holidays, parties, or anytime you want something sweet and fun.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 3 oz package of Jello (choose any flavor, or multiple flavors for variety)
  • Optional: Additional Jello powder for rolling (for extra color)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. Cream Butter and Sugar: In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy, about 2-3 minutes. Add the egg and vanilla extract, mixing until fully incorporated.
  4. Add Jello and Dry Ingredients: Mix in the Jello powder, stirring until the color and flavor are well combined. Gradually add the flour mixture, mixing until a soft dough forms.
  5. Shape the Cookies: Scoop tablespoon-sized balls of dough and roll them in your hands. If you want extra color, roll each dough ball in additional Jello powder before placing it on the baking sheet.
  6. Bake: Place the cookies on the prepared baking sheets, about 2 inches apart. Press each ball down slightly with the bottom of a glass to flatten. Bake for 8-10 minutes, or until the edges are just set (cookies will continue to firm up as they cool).
  7. Cool and Serve: Let the cookies cool on the baking sheets for a few minutes, then transfer to a wire rack to cool completely.

Notes

  • For a variety of colors, divide the dough and mix in different Jello flavors to create multiple colors.
  • Store cookies in an airtight container for up to a week.
