- 1 lb large shrimp, peeled and deveined
- 1 tbsp olive oil
- 1 jalapeño, finely chopped (seeds removed for less heat)
- 1 cup fresh pineapple, diced
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 8 small corn or flour tortillas
- 1/2 cup red cabbage, shredded (optional, for crunch)
- For the Cilantro Garlic Sauce:
- 1/2 cup sour cream or Greek yogurt
- 1/4 cup mayonnaise
- 1 clove garlic
- 1/2 cup fresh cilantro
- 1 tbsp lime juice
- Salt to taste
Instructions
- In a blender or food processor, combine all cilantro garlic sauce ingredients and blend until smooth. Adjust salt and lime to taste. Chill until ready to use.
- In a bowl, toss shrimp with olive oil, chopped jalapeño, smoked paprika, garlic powder, salt, and pepper.
- Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and opaque. Add pineapple during the last minute and cook until lightly caramelized.
- Warm tortillas in a dry skillet or microwave.
- Assemble tacos by layering cabbage (if using), shrimp and pineapple, then drizzling with cilantro garlic sauce.
- Serve immediately with lime wedges on the side.
Notes
- Use canned pineapple if fresh is not available, but drain well.
- Adjust jalapeño to your preferred spice level.
- Make the sauce ahead of time for even better flavor.
