Description

Jalapeño Pineapple Shrimp Tacos with Cilantro Garlic Sauce are bold and tropical tacos featuring spicy-sweet shrimp, juicy pineapple, and a zesty, creamy cilantro garlic sauce all wrapped in warm tortillas.


Ingredients

  • 1 lb large shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 1 cup fresh pineapple, diced
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 8 small corn or flour tortillas
  • 1/2 cup red cabbage, shredded (optional, for crunch)
  • For the Cilantro Garlic Sauce:
  • 1/2 cup sour cream or Greek yogurt
  • 1/4 cup mayonnaise
  • 1 clove garlic
  • 1/2 cup fresh cilantro
  • 1 tbsp lime juice
  • Salt to taste

Instructions

  1. In a blender or food processor, combine all cilantro garlic sauce ingredients and blend until smooth. Adjust salt and lime to taste. Chill until ready to use.
  2. In a bowl, toss shrimp with olive oil, chopped jalapeño, smoked paprika, garlic powder, salt, and pepper.
  3. Heat a skillet over medium-high heat. Add shrimp and cook 2–3 minutes per side until pink and opaque. Add pineapple during the last minute and cook until lightly caramelized.
  4. Warm tortillas in a dry skillet or microwave.
  5. Assemble tacos by layering cabbage (if using), shrimp and pineapple, then drizzling with cilantro garlic sauce.
  6. Serve immediately with lime wedges on the side.

Notes

  • Use canned pineapple if fresh is not available, but drain well.
  • Adjust jalapeño to your preferred spice level.
  • Make the sauce ahead of time for even better flavor.
