- 3 cups cooked rotini pasta, cooled
- 1 cup cherry tomatoes, halved
- 1/2 cup salami, diced or sliced into strips
- 1/2 cup mozzarella balls or cubes
- 1/4 cup black olives, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup green bell pepper, diced
- 1/4 cup red bell pepper, diced
- 2 tablespoons chopped fresh parsley or basil
- 1/3 cup Italian dressing
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water to cool.
- In a large bowl, combine the cooled pasta, cherry tomatoes, salami, mozzarella, olives, onion, and bell peppers.
- Drizzle with Italian dressing and toss to coat evenly.
- Add chopped herbs, and season with salt and pepper to taste.
- Chill for at least 30 minutes before serving for best flavor.
Notes
- Use your favorite pasta shape like penne or farfalle if rotini is not available.
- Make it vegetarian by skipping salami or replacing with marinated tofu.
- Best served chilled and can be made a day in advance.
