Description

A hearty and flavorful Italian pasta salad made with salami, fresh vegetables, mozzarella, and a tangy Italian dressing. Perfect for picnics, potlucks, or a make-ahead lunch.


Ingredients

  • 3 cups cooked rotini pasta, cooled
  • 1 cup cherry tomatoes, halved
  • 1/2 cup salami, diced or sliced into strips
  • 1/2 cup mozzarella balls or cubes
  • 1/4 cup black olives, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup green bell pepper, diced
  • 1/4 cup red bell pepper, diced
  • 2 tablespoons chopped fresh parsley or basil
  • 1/3 cup Italian dressing
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package directions. Drain and rinse with cold water to cool.
  2. In a large bowl, combine the cooled pasta, cherry tomatoes, salami, mozzarella, olives, onion, and bell peppers.
  3. Drizzle with Italian dressing and toss to coat evenly.
  4. Add chopped herbs, and season with salt and pepper to taste.
  5. Chill for at least 30 minutes before serving for best flavor.

Notes

  • Use your favorite pasta shape like penne or farfalle if rotini is not available.
  • Make it vegetarian by skipping salami or replacing with marinated tofu.
  • Best served chilled and can be made a day in advance.
