Italian Christmas Cookies

Ingredients:

4 eggs

1 cup sugar

1/2 cup unsalted butter, melted

2 tsp vanilla extract

3 1/2 cups all-purpose flour

4 tsp baking powder

2 cups confectioners’ sugar for icing

3-4 tbsp milk for icing

Sprinkles for decoration

Preheat your oven to 350°F (175°C).

In a large bowl, beat eggs and sugar until light and fluffy. Add melted butter and vanilla extract, mixing well.

In a separate bowl, combine flour and baking powder. Gradually add to the wet ingredients, mixing until a soft dough forms.

Roll dough into 1-inch balls and place on a lined baking sheet. Bake for 8-10 minutes or until lightly golden.

For the icing, mix confectioners’ sugar with milk to create a smooth, thick glaze. Dip the top of each cookie into the icing, then return to the baking sheet. Add sprinkles while icing is still wet.
