For the Beef:
- 1/2 lb (225g) roast beef (deli-sliced or leftover cooked beef)
- 1/2 cup (120ml) beef broth
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
For the Crostini:
- 1 baguette, sliced into 12 thin rounds
- 2 tablespoons olive oil
- 1/2 cup (50g) shredded mozzarella or provolone cheese
- 2 tablespoons grated Parmesan cheese
For Garnish:
- 1/4 cup (30g) roasted red peppers, finely diced
- 2 tablespoons fresh basil or parsley, chopped
- Balsamic glaze (optional, for drizzling)
Instructions
1. Prepare the Bread:
- Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet.
- Brush both sides with olive oil and bake for 6–8 minutes, flipping halfway through, until golden and crisp.
2. Prepare the Beef:
- In a skillet over medium heat, combine the beef broth, Italian seasoning, garlic powder, and red pepper flakes (if using).
- Add the roast beef slices and heat gently for 2–3 minutes until warmed through. Remove from heat.
3. Assemble the Crostini:
- Place a slice or two of warm beef on each toasted baguette slice.
- Sprinkle shredded mozzarella or provolone cheese over the beef, followed by a small amount of Parmesan cheese.
4. Melt the Cheese:
- Return the crostini to the oven and bake for 4–5 minutes, or until the cheese is melted and bubbly.
5. Garnish and Serve:
- Top each crostini with a few pieces of roasted red pepper and a sprinkle of fresh basil or parsley.
- Drizzle with balsamic glaze, if desired, for a touch of sweetness. Serve warm.
