  • 1/2 lb (225g) roast beef (deli-sliced or leftover cooked beef)
  • 1/2 cup (120ml) beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
For the Crostini:
  • 1 baguette, sliced into 12 thin rounds
  • 2 tablespoons olive oil
  • 1/2 cup (50g) shredded mozzarella or provolone cheese
  • 2 tablespoons grated Parmesan cheese
For Garnish:
  • 1/4 cup (30g) roasted red peppers, finely diced
  • 2 tablespoons fresh basil or parsley, chopped
  • Balsamic glaze (optional, for drizzling)

Instructions

1. Prepare the Bread:
  1. Preheat your oven to 375°F (190°C). Arrange the baguette slices on a baking sheet.
  2. Brush both sides with olive oil and bake for 6–8 minutes, flipping halfway through, until golden and crisp.
2. Prepare the Beef:
  1. In a skillet over medium heat, combine the beef broth, Italian seasoning, garlic powder, and red pepper flakes (if using).
  2. Add the roast beef slices and heat gently for 2–3 minutes until warmed through. Remove from heat.
3. Assemble the Crostini:
  1. Place a slice or two of warm beef on each toasted baguette slice.
  2. Sprinkle shredded mozzarella or provolone cheese over the beef, followed by a small amount of Parmesan cheese.
4. Melt the Cheese:
  1. Return the crostini to the oven and bake for 4–5 minutes, or until the cheese is melted and bubbly.
5. Garnish and Serve:
  1. Top each crostini with a few pieces of roasted red pepper and a sprinkle of fresh basil or parsley.
  2. Drizzle with balsamic glaze, if desired, for a touch of sweetness. Serve warm.
