These Peanut Butter Buckeyes are creamy, chocolate-dipped bites of peanut butter perfection. Resembling the nut of the buckeye tree, they’re a no-bake classic that’s perfect for holiday trays or as a sweet treat any time of year.

- 1 1/2 cups (375 g) creamy peanut butter
- 1/2 cup (115 g) unsalted butter, softened
- 1 teaspoon vanilla extract
- 3 1/2 cups (420 g) powdered sugar, sifted
- 2 cups (340 g) semi-sweet or milk chocolate chips
- 2 tablespoons coconut oil or shortening (optional, for smoother dipping)
Instructions
- Make the peanut butter filling:
- In a large mixing bowl, beat together the peanut butter, softened butter, and vanilla extract until smooth and creamy. Gradually add the powdered sugar, mixing until a stiff dough forms.
- Shape the buckeyes:
- Roll the peanut butter mixture into 1-inch balls (about the size of a cherry) and place them on a baking sheet lined with parchment paper. Refrigerate for 30 minutes or freeze for 15 minutes until firm.
- Melt the chocolate:
- In a microwave-safe bowl, combine the chocolate chips and coconut oil (if using). Microwave in 20-second intervals, stirring after each, until the chocolate is completely melted and smooth.
- Dip the buckeyes:
- Use a toothpick to pick up each peanut butter ball, leaving the top exposed. Dip the ball into the melted chocolate, covering about 3/4 of the ball, and leaving a “buckeye” eye at the top. Gently tap off excess chocolate and place the dipped ball back on the parchment paper. Remove the toothpick and smooth over the hole if desired.
- Set the buckeyes:
- Refrigerate the dipped buckeyes for at least 30 minutes to allow the chocolate to harden.
- Serve and store:
- Serve chilled or at room temperature. Store in an airtight container in the refrigerator for up to 2 weeks or freeze for up to 3 months.
