Description

A hearty and comforting one-pot meal made in the Instant Pot, this American-style goulash features ground beef, pasta, tomatoes, and spices for an easy weeknight dinner.


Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 1.5 lbs ground beef
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons Italian seasoning
  • 1 tablespoon paprika
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups beef broth
  • 2 cups elbow macaroni, uncooked
  • 1 cup shredded cheddar cheese (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Set the Instant Pot to sauté mode. Heat olive oil, then add diced onion and garlic. Cook until softened, about 3-4 minutes.
  2. Add ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if necessary.
  3. Season with salt, pepper, Italian seasoning, and paprika. Stir well to combine.
  4. Turn off sauté mode. Add tomato sauce, diced tomatoes (with juice), and beef broth. Stir to combine.
  5. Stir in the uncooked macaroni. Make sure pasta is submerged in the liquid.
  6. Close the lid, set the valve to sealing, and cook on high pressure for 4 minutes.
  7. Quick release the pressure when cooking time is done. Stir the goulash and let sit for 5 minutes to thicken.
  8. Stir in shredded cheddar cheese if using, and garnish with fresh parsley before serving.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • For extra veggies, add diced bell peppers or mushrooms while sautéing the onion.
  • Leftovers store well in the fridge for up to 3 days and can be reheated easily.
