Instant Pot Chicken Cacciatore is a flavorful and hearty Italian-inspired dish made with tender chicken, bell peppers, onions, and mushrooms in a rich tomato-based sauce, all cooked quickly in a pressure cooker.

- 2 lbs chicken thighs (bone-in or boneless, skin removed)
- 2 tbsp olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 8 oz mushrooms, sliced
- 3 garlic cloves, minced
- 1 (14 oz) can diced tomatoes
- 1/2 cup tomato sauce
- 1/2 cup dry white wine or chicken broth
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp thyme
- Salt and black pepper to taste
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Set Instant Pot to sauté mode and heat olive oil. Add chicken and brown on both sides for 3-4 minutes. Remove and set aside.
- Add onions, bell peppers, and mushrooms to the pot and sauté for 4-5 minutes until softened.
- Stir in garlic and cook for another 30 seconds.
- Deglaze with white wine or broth, scraping the bottom of the pot.
- Add diced tomatoes, tomato sauce, oregano, basil, thyme, salt, and pepper. Stir well.
- Return chicken to the pot, nestling it into the sauce.
- Seal the lid and cook on high pressure for 10 minutes.
- Let the pressure release naturally for 10 minutes, then quick release any remaining pressure.
- Open the lid, stir gently, and garnish with parsley before serving.
Notes
- Use boneless chicken for faster cooking and easier serving.
- Add crushed red pepper flakes for a spicy kick.
- Serve over pasta, rice, or mashed potatoes.
- Leftovers can be refrigerated for up to 3 days.
