- 1 cup (250 ml) beer (lager or pale ale works well)
- 1 cup (250 ml) whole milk or heavy cream
- 1 teaspoon Dijon mustard
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional, for extra spice)
- 2 cups (200 g) shredded sharp cheddar cheese
- 1 cup (100 g) shredded Monterey Jack cheese
- Salt and pepper to taste
- Green onions or chives, chopped (for garnish)
Instructions
- Cook the Sausage:
- Heat a large skillet over medium heat.
- Add the sausage and cook until browned and crumbled, about 5-7 minutes. Drain excess fat if necessary and set the sausage aside.
- Make the Cheese Sauce:
- In the same skillet, add the flour to the sausage drippings (or add olive oil if the skillet is too dry). Cook for 1-2 minutes, stirring constantly, to form a roux.
- Gradually whisk in the beer, followed by the milk or cream. Cook, stirring frequently, until the mixture thickens slightly, about 3-4 minutes.
- Stir in the Dijon mustard, garlic powder, smoked paprika, and cayenne pepper (if using).
- Melt the Cheese:
- Reduce the heat to low and add the shredded cheddar and Monterey Jack cheeses, one handful at a time, stirring until fully melted and smooth.
- Combine the Sausage and Cheese Sauce:
- Return the cooked sausage to the skillet and stir to combine with the cheese sauce. Adjust seasoning with salt and pepper as needed.
- Serve:
- Transfer the dip to a serving dish or keep warm in a small slow cooker. Garnish with chopped green onions or chives.
