Description

Hot Honey Carrots are sweet, savory, and a little spicy — roasted carrots glazed with buttery hot honey for an easy side dish that’s packed with flavor.


Ingredients

  • 1 pound carrots, peeled and cut into sticks or coins
  • 2 tablespoons olive oil
  • Salt and black pepper, to taste
  • 2 tablespoons unsalted butter
  • 2 tablespoons honey
  • 1/2 teaspoon red pepper flakes (adjust to taste)
  • 1 tablespoon chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place carrots on the baking sheet and drizzle with olive oil. Season with salt and pepper; toss to coat evenly.
  3. Roast for 20–25 minutes, or until tender and slightly caramelized, tossing halfway through.
  4. Meanwhile, in a small saucepan over low heat, melt butter and stir in honey and red pepper flakes. Remove from heat once combined.
  5. Drizzle hot honey glaze over roasted carrots and toss gently to coat.
  6. Transfer to a serving dish and garnish with chopped parsley if desired.

Notes

  • Adjust red pepper flakes for more or less heat.
  • Try using rainbow carrots for a colorful twist.
  • Leftovers can be reheated in a skillet or microwave.
