Hot Honey Carrots are sweet, savory, and a little spicy — roasted carrots glazed with buttery hot honey for an easy side dish that’s packed with flavor.

- 1 pound carrots, peeled and cut into sticks or coins
- 2 tablespoons olive oil
- Salt and black pepper, to taste
- 2 tablespoons unsalted butter
- 2 tablespoons honey
- 1/2 teaspoon red pepper flakes (adjust to taste)
- 1 tablespoon chopped fresh parsley (optional)
Instructions
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Place carrots on the baking sheet and drizzle with olive oil. Season with salt and pepper; toss to coat evenly.
- Roast for 20–25 minutes, or until tender and slightly caramelized, tossing halfway through.
- Meanwhile, in a small saucepan over low heat, melt butter and stir in honey and red pepper flakes. Remove from heat once combined.
- Drizzle hot honey glaze over roasted carrots and toss gently to coat.
- Transfer to a serving dish and garnish with chopped parsley if desired.
Notes
- Adjust red pepper flakes for more or less heat.
- Try using rainbow carrots for a colorful twist.
- Leftovers can be reheated in a skillet or microwave.
