Instructions
- In a bowl, toss beef slices with cornstarch, salt, and pepper until evenly coated.
- Cook noodles per package directions, drain and toss with sesame oil; set aside.
- Heat vegetable oil in a large skillet or wok over medium‑high heat.
- Add beef strips in a single layer; sear without stirring for about 1‑2 minutes per side until golden and crispy. Work in batches to avoid crowding. Transfer cooked beef to a plate.
- Lower heat to medium. In the same pan, add garlic and ginger; sauté for 30 seconds until fragrant.
- Stir in soy sauce, honey, rice vinegar, and chili paste (if using). Let the sauce bubble and slightly thicken, about 1‑2 minutes.
- Add crispy beef and cooked noodles back to the pan; toss everything together to coat in sauce and heat through.
- Plate immediately, garnished with sliced green onions and a sprinkle of sesame seeds.
