- 4 oz pancetta, diced

- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet and brush with olive oil.
- Toast in the oven for 8–10 minutes or until golden and crisp.
- In a skillet over medium heat, cook pancetta until crispy, about 5–7 minutes. Transfer to a paper towel-lined plate to drain.
- Spread a generous spoonful of ricotta on each toasted baguette slice.
- Top with a few slices of peach and a sprinkle of crispy pancetta.
- Drizzle with honey and season with salt and pepper.
- Garnish with fresh thyme leaves if desired. Serve immediately.

- Use nectarines or figs as a peach alternative.
- You can substitute prosciutto for pancetta if preferred.
