Description

This Honey-Pecan Sweet Potato Goat Cheese Delight is a beautiful blend of flavors and textures. Roasted sweet potato rounds are topped with creamy goat cheese, toasted pecans, and a drizzle of honey. It’s the perfect balance of sweet, savory, creamy, and crunchy—ideal for holidays, dinner parties, or a gourmet-style snack.


Ingredients

  • 2 medium sweet potatoes, peeled and sliced into 1/2-inch rounds

  • 2 tbsp olive oil

  • Salt and pepper, to taste

  • 4 oz goat cheese, softened

  • 1/2 cup chopped pecans, toasted

  • 3 tbsp honey (plus more for drizzling)

  • 1/2 tsp cinnamon (optional)

  • Fresh thyme or rosemary for garnish (optional)


Instructions

  1. Preheat Oven:

    • Preheat oven to 400°F (200°C).

    • Line a baking sheet with parchment paper.

  2. Roast the Sweet Potatoes:

    • Place sweet potato rounds on the baking sheet.

    • Brush both sides lightly with olive oil and season with salt and pepper.

    • Roast for 20–25 minutes, flipping halfway through, until fork-tender and lightly golden.

  3. Toast the Pecans:

    • While potatoes roast, toast chopped pecans in a dry skillet over medium heat for 3–5 minutes until fragrant. Set aside.

  4. Assemble the Delight:

    • Let sweet potato slices cool slightly.

    • Spread or pipe a dollop of goat cheese on each slice.

    • Sprinkle toasted pecans on top.

    • Drizzle with honey and sprinkle with cinnamon if using.

  5. Serve:

    • Garnish with fresh thyme or rosemary if desired.

    • Serve warm or at room temperature.

 



Notes

  • For extra flavor, mix a little honey and cinnamon directly into the goat cheese before spreading.

  • Want to make it ahead? Roast the sweet potatoes and toast the pecans in advance, then assemble just before serving.

  • You can swap goat cheese for whipped feta or cream cheese if preferred.
