Ingredients
For the sandwich:

4 slices of whole grain, sourdough, or sandwich bread (toasted if desired)

6-8 slices of deli turkey (about 6 oz)

1 ripe avocado, sliced

4 tomato slices

2 leaves of romaine or butter lettuce

2 slices provolone, Swiss, or cheddar cheese (optional)

Salt and pepper, to taste
For the honey mustard spread:

2 tablespoons mayonnaise or Greek yogurt

1 tablespoon Dijon mustard

1 tablespoon honey

1/2 teaspoon lemon juice (optional)
Instructions

Make the honey mustard:

In a small bowl, stir together mayo (or yogurt), Dijon mustard, honey, and lemon juice. Mix until smooth and creamy.

Assemble the sandwich:

Spread honey mustard sauce on one side of each slice of bread.

Layer turkey slices, cheese (if using), tomato, avocado, and lettuce on two of the slices.
