- 2 lbs (900 g) baby potatoes, halved
- 2 tablespoons olive oil
- 2 tablespoons butter, melted
- 2 tablespoons honey
- 2 tablespoons Dijon mustard
- 1 teaspoon whole grain mustard (optional, for texture)
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika (optional)
- 1 tablespoon chopped fresh parsley (for garnish)
Instructions
1️⃣ Preheat & Prep
- Preheat oven to 400°F (200°C).
- Line a baking sheet with parchment paper or grease lightly.
2️⃣ Make the Honey Mustard Sauce
- In a bowl, whisk together olive oil, melted butter, honey, Dijon mustard, whole grain mustard, garlic, salt, pepper, and smoked paprika.
3️⃣ Coat the Potatoes
- Toss the halved potatoes in the honey mustard mixture until evenly coated.
- Spread them in a single layer on the baking sheet.
4️⃣ Bake Until Crispy
- Roast for 35-40 minutes, flipping halfway through, until golden brown and crispy on the edges.
5️⃣ Serve & Enjoy!
- Sprinkle with fresh parsley and serve hot.
