Description

This honey-lime chicken and veggies foil pack is a fuss-free, flavorful meal made with juicy chicken, crisp-tender vegetables, and a zesty honey-lime glaze. It’s perfect for the oven, grill, or campfire, and cleanup is a breeze!


Ingredients

  • 2 boneless, skinless chicken breasts, halved horizontally (4 thin pieces)

  • 2 tablespoons olive oil

  • 2 tablespoons honey

  • 2 tablespoons fresh lime juice

  • 1 teaspoon lime zest

  • 2 cloves garlic, minced

  • 1/2 teaspoon chili powder (optional, for a kick)

  • Salt and pepper, to taste

  • 1 cup zucchini, sliced

  • 1 cup red bell pepper, chopped

  • 1 cup broccoli florets

  • 1/2 red onion, sliced

 

  • 1 cup baby carrots, halved lengthwise


Instructions

  1. Preheat oven to 400°F (200°C) or heat grill to medium.

  2. In a small bowl, whisk together olive oil, honey, lime juice, lime zest, garlic, chili powder, salt, and pepper.

  3. Cut four large pieces of heavy-duty aluminum foil (or double up regular foil for durability).

  4. Divide chicken and vegetables evenly among the foil pieces.

  5. Drizzle the honey-lime sauce evenly over each packet.

  6. Fold the sides of the foil over the chicken and veggies, sealing tightly to make a packet.

  7. Bake for 25–30 minutes or grill for 15–20 minutes, until chicken is cooked through and veggies are tender.

  8. Carefully open foil packs (watch for steam!) and serve as is or over rice or quinoa.


Notes

  • For extra flavor, marinate the chicken in the honey-lime mixture for 15–30 minutes before cooking.

  • Use any seasonal veggies you have—snap peas, green beans, or mushrooms are great options.

  • These packets can be made ahead and refrigerated until ready to cook.
