Description

These juicy grilled chicken skewers are marinated in a bold blend of honey, chipotle peppers, garlic, and spices. The sweet and spicy glaze caramelizes on the grill, giving each bite a smoky, slightly sticky kick that’s totally irresistible.


Ingredients

For the Marinade:

  • 1/4 cup honey

  • 2 tbsp olive oil

  • 2 tbsp soy sauce

  • 2 tbsp apple cider vinegar

  • 2 tbsp chipotle peppers in adobo (finely chopped)

  • 3 cloves garlic, minced

  • 1 tsp ground cumin

  • 1/2 tsp salt

  • 1/4 tsp black pepper

For the Skewers:

  • 1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes

  • 1 red bell pepper, chopped into 1-inch chunks

  • 1 green bell pepper, chopped

  • 1 red onion, chopped

  • Skewers (soaked if wooden)


Instructions

  1. Make the marinade:
    In a bowl, whisk together honey, olive oil, soy sauce, vinegar, chipotle, garlic, cumin, salt, and pepper.

  2. Marinate the chicken:
    Place chicken in a large zip-top bag or bowl. Pour in half the marinade (reserve the rest for basting). Seal and refrigerate for at least 30 minutes, up to 2 hours.

  3. Assemble the skewers:
    Thread chicken, peppers, and onion onto skewers, alternating pieces.

  4. Grill:
    Preheat grill to medium-high. Lightly oil the grates. Grill skewers for 10–12 minutes, turning every few minutes and brushing with the reserved marinade. Cook until chicken is nicely charred and reaches 165°F internally.

  5. Serve:
    Let rest for a few minutes, then serve warm with rice, grilled veggies, or salad.


Notes

  • Want it extra spicy? Add more chipotle or a dash of cayenne.

  • No grill? Bake at 425°F for 20–25 minutes or broil until charred.

  • Great as a meal prep option – leftovers reheat beautifully!
