1/4 tsp black pepper
For the Skewers:

1 1/2 lbs boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
-
1 red bell pepper, chopped into 1-inch chunks

-
Skewers (soaked if wooden)
Instructions
-
Make the marinade:
In a bowl, whisk together honey, olive oil, soy sauce, vinegar, chipotle, garlic, cumin, salt, and pepper. -
Marinate the chicken:
Place chicken in a large zip-top bag or bowl. Pour in half the marinade (reserve the rest for basting). Seal and refrigerate for at least 30 minutes, up to 2 hours. -
Assemble the skewers:
Thread chicken, peppers, and onion onto skewers, alternating pieces. -
Grill:
Preheat grill to medium-high. Lightly oil the grates. Grill skewers for 10–12 minutes, turning every few minutes and brushing with the reserved marinade. Cook until chicken is nicely charred and reaches 165°F internally. -
Serve:
Let rest for a few minutes, then serve warm with rice, grilled veggies, or salad.
Notes
-
Want it extra spicy? Add more chipotle or a dash of cayenne.
-
No grill? Bake at 425°F for 20–25 minutes or broil until charred.
