Base Ingredients:
- 1 cup (150 g) medjool dates, pitted
- 1 cup (120 g) raw nuts (almonds, cashews, or walnuts)
- 1/2 cup (40 g) rolled oats (optional for added texture)
Flavor Variations (Choose One):
- Chocolate:
- 2 tbsp (15 g) cocoa powder
- 1/4 cup (30 g) dark chocolate chips (optional)
- Berry Delight:
- 1/3 cup (40 g) dried cranberries or freeze-dried raspberries
- Zest of 1 lemon
- Coconut:
- 1/3 cup (30 g) shredded unsweetened coconut
- 1 tsp vanilla extract
Instructions
1. Prepare the Base Mixture:
- In a food processor, pulse the nuts until finely chopped but not turned into a powder.
- Add the dates and pulse until the mixture becomes sticky and starts to clump together.
- Add the oats (if using) and your chosen flavor ingredients. Process until well combined.
2. Form the Bars:
- Transfer the mixture to a piece of parchment paper or plastic wrap. Press it into a compact rectangle, about 1/2-inch thick.
- Wrap tightly and refrigerate for at least 1 hour to firm up.
3. Slice and Serve:
- Once chilled, cut into bars or squares. Store in an airtight container in the fridge for up to 2 weeks or freeze for longer storage.
Notes
- For extra stickiness, soak the dates in warm water for 10 minutes if they’re not soft. Drain before using.
