Scale
- 4 cups all-purpose flour
- 1/3 cup granulated sugar
- 1 packet (2 1/4 tsp) active dry yeast
- 1/2 teaspoon salt
- 2 large eggs
- 1/2 cup pineapple juice
- 1/4 cup whole milk
- 1/4 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 tablespoon honey
- 1 egg (for egg wash)
- 1 tablespoon water (for egg wash)
Instructions
- In a small bowl, warm the pineapple juice and milk to about 110°F (43°C), then stir in the yeast and a pinch of sugar. Let sit for 5–10 minutes until foamy.
- In a large mixing bowl, combine flour, remaining sugar, and salt.
- In a separate bowl, whisk together the eggs, melted butter, vanilla extract, and honey.
- Add the yeast mixture and egg mixture to the flour mixture. Mix until a soft dough forms.
- Knead the dough for 8–10 minutes until smooth and elastic. Add a little flour if too sticky.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- Punch down the dough and divide into 12 equal portions. Shape into balls and place in a greased 9×13-inch baking dish.
- Cover and let rise again for about 45 minutes, until puffy.
- Preheat oven to 350°F (175°C). Whisk together egg and water for the egg wash, then brush over the tops of the rolls.
- Bake for 20–25 minutes, or until golden brown. Cool slightly before serving.
Notes
- For extra sweetness, brush the baked rolls with honey butter.
- You can make the dough ahead and refrigerate overnight after the first rise.
- Perfect for sliders, pulled pork sandwiches, or served with holiday meals.
