Ingredients

  • 1 1/2 tsp salt
  • 1 tbsp olive oil (optional, for a softer crust)
  • 1 egg + 1 tbsp water (for egg wash, optional)

Instructions

Step 1: Activate the Yeast

  1. In a small bowl, mix warm water, yeast, and sugar. Let sit for 5–10 minutes until foamy. (If using instant yeast, you can skip this step and mix everything together in Step 2.)

Step 2: Make the Dough

  1. In a large mixing bowl, combine flour and salt.
  2. Add the yeast mixture and mix until a shaggy dough forms.
  3. Knead on a floured surface for 8–10 minutes until smooth and elastic. (If using a stand mixer, knead with the dough hook on medium speed for 5 minutes.)

Step 3: First Rise

  1. Place the dough in a greased bowl, cover with a kitchen towel, and let rise in a warm place for 1 hour, or until doubled in size.

Step 4: Shape the Loaves

  1. Punch down the dough and divide it into two equal portions.
  2. Roll each portion into a 12-inch log, tucking the edges under.
  3. Place the loaves on a parchment-lined baking sheet.

Step 5: Second Rise

  1. Cover with a towel and let rise for 30 minutes, until puffy.

Step 6: Prepare for Baking

  1. Preheat oven to 400°F (200°C).
  2. Lightly brush the loaves with an egg wash for a shiny crust (or mist with water for a crispier crust).
  3. Use a sharp knife or bread lame to make 3 diagonal slashes on each loaf.

Step 7: Bake & Cool
