Description

This classic Hillbilly Pie, also known as Poor Man’s Pie, is a sweet, custardy dessert made with basic pantry ingredients. Traditionally, it was a go-to dessert during tough times because it requires no eggs, nuts, or expensive ingredients—just sugar, flour, butter, and milk! It’s a nostalgic, comforting treat that’s easy to make.

  • 1 unbaked pie crust (store-bought or homemade)
  • 1 cup granulated sugar
  • 3 tablespoons all-purpose flour
  • 1 cup whole milk
  • 4 tablespoons unsalted butter, cut into small pieces
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional, for extra flavor)
  • Pinch of salt

Instructions

  1. Preheat Oven – Set your oven to 375°F (190°C). Place the unbaked pie crust into a 9-inch pie dish and crimp the edges.
  2. Make the Filling – In a bowl, whisk together the sugar, flour, and salt. Slowly stir in the milk and vanilla extract until smooth.
  3. Assemble the Pie – Pour the mixture into the unbaked pie crust. Dot the top with small pieces of butter.
  4. Bake – Place in the oven and bake for 40-45 minutes, or until the filling is golden and slightly firm. The center may jiggle a little, but it will set as it cools.
  5. Cool & Serve – Let the pie cool for at least 1 hour before slicing. Serve warm or chilled, with or without whipped cream!

Notes

  • Crust Alternative: Try it with a graham cracker crust or biscuit crust for a twist.
  • Extra Flavor: Some versions include a drizzle of molasses or a pinch of nutmeg for extra depth.
