- 1 cup low-fat cottage cheese
- 4 oz light cream cheese, softened
- 1/4 cup plain Greek yogurt
- 2 tbsp honey or maple syrup
- 1/2 tsp vanilla extract
- 1/2 cup crushed graham crackers
- 1/2 cup diced fresh strawberries
- Optional: extra crushed graham crackers or freeze-dried strawberries for topping
Instructions
- In a food processor, blend cottage cheese, cream cheese, Greek yogurt, honey, and vanilla extract until smooth and creamy.
- Fold in the diced strawberries.
- Using a small cookie scoop or spoon, portion the mixture into small silicone molds or mini muffin liners.
- Sprinkle crushed graham crackers on top of each bite.
- Freeze for at least 2 hours or until firm.
- Once frozen, remove from molds and store in an airtight container in the freezer.
- Let sit at room temperature for 2–3 minutes before eating for best texture.
