  • 1 (28-ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 (15-ounce) can white beans, drained and rinsed (optional)
  • 2 cups fresh spinach or kale, chopped
  • 1 package (9 ounces) refrigerated cheese tortellini
  • 1/2 cup heavy cream (optional, for a creamy version)
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper
  • 1/2 cup grated Parmesan cheese (for serving)
  • Fresh basil or parsley, for garnish

Instructions

  1. Cook the sausage – Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned (about 5 minutes). Drain excess grease if needed.
  2. Sauté aromatics – Add diced onion and cook until soft (about 3 minutes). Stir in garlic, Italian seasoning, and red pepper flakes, cooking for another 30 seconds until fragrant.
  3. Build the broth – Pour in crushed tomatoes and chicken broth. Bring to a simmer and let cook for 10 minutes.
  4. Add beans & greens – Stir in white beans (if using) and chopped spinach or kale. Let it cook until the greens wilt (about 2 minutes).
  5. Cook the tortellini – Add tortellini to the pot and cook according to the package instructions (usually 3-5 minutes).
  6. Make it creamy (optional) – Stir in heavy cream for a richer texture.
  7. Season & serve – Taste and adjust seasoning with salt and pepper. Ladle into bowls and top with grated Parmesan and fresh basil or parsley. Serve hot!
